On a flight recently, I listened carefully to the list of drinks and snacks that were offered to the passengers. As I watched the majority of my seatmates consume sodas, juice, crackers, and other high-glycemic-index foods, it wasn’t hard to imagine what was happening to their bodies while they silently flew toward their destination.
The blast of sugar triggered a spike in blood glucose, triggering a potent release of insulin to drive the glucose into the cells, which then led to hypoglycemia and a release of the counter-regulatory hormones, including cortisol. This soft-drink-induced event ended with release of free fatty acids in the form of triglycerides and other fats and increased adiposity in the abdominal cavity.

The result is more allostatic load, cortisol, free fats, obesity, and inflammation. The cycle repeats with every high-glycemic meal leading to a steady weight gain and progressive damage that impacts overall health down to the cellular level.
